Setting up a new food premises 

The Establishing a Food Premises Guidelines(PDF, 850KB) provides a summary of the requirements for setting up a new food premises within the Town of Cambridge.

Before operating a food premises, please ensure that you have obtained all necessary planning and building approvals from the Town, in order to operate the food premises in the Town. 

Approval from the Environmental Health Services Team is required before undertaking any new development, alterations, or extensions, regardless of any exemptions for planning or building approvals. 

Prior to the operation of the food premises, all new (and existing) food premises are required to complete a Food Premises Notification Registration Form pursuant to the Food Act 2008 and Food Regulations 2009. The Food Premises Notification Registration Form can be completed here.

Following receipt of the Food Premises Notification Registration Form, the Environmental Health Services Team conducts risk assessments for all registered food premises based on their food operations and activities. This assessment determines the food safety inspection frequency undertaken, and the applicable annual fee applied, by the Town. 

The construction, operation, and maintenance standards for food premises are outlined in the Australia New Zealand Food Standards Code.

If you have an approved food premises, an appropriately trained Food Safety Supervisor must be nominated and their details provided to the Town here.

 

New food safety management tools include: 

  • Appointing a Food Safety Supervisor who has undertaken a relevant food safety training course.
  • Food handler training or holding the necessary skills and knowledge in safe food handling.
  • Managing food safety controls and record keeping.

Planning and building requirements for food premises 

The premises you have chosen may require development approval in accordance with the Town's Planning Scheme, particularly in relation to zoning, parking, and other relevant considerations.

You may also be required to submit an application for a building permit.

Taking over/refurbishing an existing food premises 

If you are taking over an existing food premises, it is recommended that your Settlement Agent requests a written report from the Town's Environmental Health Services Team. This report provides details of the most recent food safety inspection, any outstanding Notices, and any applicable fees or charges.

Refurbishing an existing food premises

If you are proposing to make any changes to the internal structure of the premises, please refer to the Australia New Zealand Food Standards Code for more information. This document provides you with further detail on the environmental health requirements that are to be met. 

Depending on the extent of the proposed changes, building and/or development approval may be required.
